I don't know if this has been brought up before or not, but I gotta know...

After Sultana and Midnight REFUSED to eat my lima beans last night, I got to thinking... how many educated, health-conscious (as in they know what is good and bad and choose one or the other) adults just avoid vegetables and skate by on junk food / Centrum / or consider a potato to be a vegetable?

Just some quick questions:

What is your daily / weekly vegetable intake?

Do you prefer canned or frozen or raw?

Your opinions on lima beans / brussel sprouts?

...

Lima beans are your friends. They are. I asked.

I don't eat lima bans because they taste like fart. Mealy fart, at that.

I eat literally pounds of vegetables every week, I'm very health-conscious.

I prefer frozen for ease of storage and meal prep. Don't like canned at all.

Lima beans: Ew, but will eat them mixed with other veggies.
Brussel Sprouts: Disgusting. I don't even like to be around someone whose recently eaten them (sorry).

Who would eat their friends?

I don't know what my intake is but I eat vegetables everyday.

I like them either frozen or raw (or cooked from raw).

I like lima beans and I LOVE brussels sprouts. The only vegetables I don't particularly care for are eggplant and a couple varieties of squash.

I try to set a good example for my children and eat at least 2 or 3 servings of veggies a day. I prefer fresh veggies, but use frozen because they are more convenient. I don't do canned ever.

Lima beans? Can't say I like them, but I don't hate them. If someone makes something with them, I'd try them.

Brussel Sprouts? Never had them. I hear they have a bad rep for being smelly.

I eat crap. Not to big on the veggies. Fruits are cool, though. I eat me a bunch of fruit, but my veggie intake is admittadly abismal. This is a subject that Mrs. O'Rights and I go round and round about.

Brussel Sprouts?!? Oh...gag me!!
Lima beans? I'll eat 'em. But only under extreme duress.

I eat a bowl of spinach a day, plus the occasional potato.

I'm a man of routine, if i don't have a routine, i don't eat properly.

All i can think of when you say lima bean is leader bean :D

Lima beans with lots of butter and black pepper..mmmm...
Brussel sprouts are good, again, lots of butter. Hell, almost any veggie goes down good with lots of butter!
Hate asparagus, squash, sweet potatoes, eggplant, cauliflower and cooked spinach, but love spinach salad.
Having said all that...I'm a lousy veggie eater. It's hard to cook what you like when half the family hates it, so we mostly have corn and the spouse and daughter eat those cheese-covered frozen veggies once in a while.
I used to grow my own sweet peas, corn, tomatoes, peppers and broccoli plus some herbs, but the garden patch got depleted 3 years ago(things just wouldn't grow anymore) and I haven't replaced it.

brussell sprouts are awesome tossed with a bit of olive oil and tons of garlic, and roasted until lightly browned - then a sprinkling of good parmesan cheese makes them oh so tasty.

No canned vegetables for me, unless it's beets
No frozen vegetables for me, unless it's corn
Veggies must be fresh, and preferably roasted.. and I eat lots and l ots of veggies

I eat a lot of vegetables, usually in the form of a loaded salad or wraps/pitas stuffed with veggies.

Yum.

There are very few vegetables I won't eat--but I don't like cauliflower much. That's about the only one.

Canned baby peas and frozen corn are edible, everything else has to be fresh.

Lima bean, turnips, and radishes are about the only veggies I won't eat. I have an aversion to the iodine taste in the latter. Being forced to eat lima beans as a kid makes me totally unwilling to give them a fair chance now.

For lunch today I had canned lima beans with a healthy sprinkling of Tobasco Sauce. Yep, I'm addicted. I'll eat any veggies. Fresh is best, but canned is good. (only Del Monte) Frozen are okay, in a pinch. Veggies are my priority when it comes to dining. I'm not much a beef eater. Chicken and seafood (fresh is best) are better. I make a meal out of veggies.....and some fresh fruit.

Anyone want to talk about broccoli??? YUmmyyyyyy

I like my broccoli lightly steamed and dressed with a little olive oil and garlic. That's how I like most of my vegetables--either lightly steamed or blanched. Green beans, especially, still need to be crispy. I eat green beans any way they come, but I prefer them raw, actually.

Does anyone else like to eat cucumbers plain? I do. I also like them in rice vinegar and seasonings--sort of like a quick pickle.

A question for the veggie lovers here--do any of you shop at farmer's markets for your fresh produce?

The farmer's market near me is only open for a few hours on saturday morning and isn't cheap for ok quality stuff.. Whole foods has better prices some days...

The farmer's markets are great around here. The fresh corn in June was 'to die for'. I do like cucumbers plain. Cucumbers are easy to grow. One summer when I was a wee one we had cucumbers everywhere. They gave up veggie gardening not too long after that. Cucumber sandwiches, now that's good. Add a little anchovie paste. I prefer my broccoli with a little butter and a lot of lemon juice. How do y'all roast your veggies. Down here we mostly boil, steam and eat em' raw. Okay, we fry also. So, I'm curious about this 'roasting'. Details please.

cut up the veggies into chunks
toss with a bit of olive oil if you please
chop up some garlic if you like (garlic powder offends my sensibilities :D
throw into pan

Put in oven (around 400 degrees, but I also do this in my toaster oven on broil) for about 10 - 15minutes or desired degree of doneness - I like veggies barely cooked.

Toss with some fresh grated parmesan cheese (the stuff in the green can makes me want to hurt people :)

I will do this for carrots (they take a little longer to cook and if i do carrots, i will add in some thyme as well), zucchini, broccoli, beets (canned are fine and a splash of balsamic vinegar goes nicely with them), eggplant, red or yellow peppers, really any vegetable will do withi this method.

For the most part, I love vegetables. But I do not eat enough of them. Were they sold in the vending machines at work I know I'd do better, weigh less and be better off.

Sadly the closest I get to consuming enough of anything that was once part of a growing plant is the hops and barley that I take in. Oh.... and the coffee.

Everyone--and I mean everyone--should invest in a Microplane if they like parmesan cheese. We buy big hunks of parmigiano reggiano from Costco, along with asiago and pecorino romano, and grate it fresh when we need it.

And hang on to the rinds! They add great flavor to soups. I keep mine in a plastic bag in the freezer.

Growing up I wouldn't eat any veg. Peas, corn and potato was the limit. It wasn't until University that I changed... I started eating salad, zucchini, peppers, etc.

Now I have veggies all the time. that said, I am not a fan of the lima bean. it has everything to do with the mouth feel.

I love veggies. fresh, steamed, blanched, roasted, grilled... will NOT eat canned veggies. the lima bean thing in shout was more to mess with your head than anything, I just didnt want to be cyber force-fed Limas - they dont go with everything.. lol..

LOVE brussel sprouts, and I bet I could get sultana to eat them as well - they just have to be prepared the right way and the poor woman has probably had them prepared badly.

maleficent - oh HELL YEAH thats how I used to eat my broc before I had to have my gall bladder removed, now I cant eat broc or cauliflower or I get violently ill.

snowy - cucumbers - yeah - plain, in salads, sliced thin and dressed with sour cream, a splash of vinegar, salt, pepper, green onions and LOTS of fresh dill (also great on or with fish)

if anyone needs any kind of recipe for anything to do with veges of any kind, or some salad dressing ideas/recipes, just hit me up in a PM with a request. (well, for anything regarding cooking really)

This may be the thread that does the most to motivate me to eat better. reading all the mentions of cauliflower and broccoli which I enjoy raw has me craving some. However I have to learn to avoid the Ranch dressing for it to be the most benefit. Add carrots, cucumbers, onions and damn near any fruit I can think of to the list there is no excuse to not eating more of these things. They would keep well in the fridge at work until break and require little or no preparations.

I LOVE most veggies. We grow them in a small garden sometimes, but it isn't enough to last us for long. I prefer raw, but they are a tad difficult to eat with braces. I'll do frozen if I can't do fresh. Canned is my last choice. Except for green beans. I only like them canned. The only things I don't like are okra and squash, unless it is zuchinni and it is cooked very lightly so it is still a little crunchy.

Lima beans or any kind of beans are yummy, but I don't eat them often because they make my house smell if I am home.

Lima beans or brussel sprouts? Can't I have both?

Anyone else get a craving for veggies after reading this thread?

Okay, we'll be trying the roasted broccoli this weekend. Not sure about the parmesan though. A Costco is going up 40 minutes away, but maybe one of our local supermarkets has the fresh parmesan. I guess the little packets from Pizza Hut wouldn't do?

I like low-cal Italian for dipping. I used to be a big fan of ranch and Caesar dressing, but now I use either low-cal Italian or Salad Spritzers--low-calories, low-fat, and it distributes the dressing evenly over what you're eating.

And Grancey, any local supermarket that has a specialty cheeses display of some kind will have a good quality parmesan.

i'm mostly vegetarian, with occasional meat eating. mostly fresh veggies, cooked, mostly roasted, not boiled to crap. i eat all beans, lima, lentle, green, garbonzos are my favorite cause you can bake them or make them into hummus or falafel or eat them raw or throw them at your pot smoking emo cat....

roast fennel ROCKS, and stuffed baked artichokes kick ass and grilled asparagus is also awesome....

beets are cool cause they make you pee red....

I love lima beans and brussel sprouts are one of my favorite foods. Earlier this week I made a 9:30pm run to the local market for milk and since I hadn't eaten dinner yet, I was hunting around for something quick and tasty, first I was going to get one of those plastic wrapped organic guacamoles which I think tastes pretty damn good, but then I didn't want all the spicyness so close to bedtime, so I looked in their organic veggy section but didn't see anything that inspired me, but then I found a little pint of brussel sprouts that cried out to me; I cut each one in half lengthwise, then steam them to medium done, then drop them into a frying pan with my favorite olive oil, salt and pepper, and I just ate the whole pint with nothing else for dinner ...damn they taste so good. I do lima beans various ways, but the same method for those also works very well unless I do a soup.

This past weekend my kids wanted me to take them to our "South St." where they like to walk up and down the street window shopping and looking at all the other people looking at the less mainstream people hanging around; well we got the muchies and I tried a vegetarian "fast food" joint I've never tried before ...damn it was so good I'm going back. It's a Maoz vegetarian joint; if there's one near you, give it a try. After all that, I am definitely omnivorous, so I really enjoy a good rare porterhouse steak or prime rib occasionally.

Up until this spring, I ate very little in the way of vegetables. Most of my veggies were starches (corn) or salad vegetables.

This year we went hardcore and joined a CSA (Community Supported Agriculture). Now, every Thursday we get a big mystery box of whatever is fresh that week. So, Thursday evenings are a moment of "Huh. I wonder what this is, and how are we supposed to cook it?" So far, I've eaten everything that came, except for the radishes. Radishes taste like spicy dirt.

No lima beans yet.

Summer is the time of year when Southerners eat entire meals of veggies only and we did our patriotic part this year. The only meat I can remember us eating all summer was some occasional bacon, but otherwise our menu looked a lot like this every night:

Fresh corn on the cob (Farmer's market)
Sliced tomato (Farmer's market)
Rice(Grocery store)
Lima beans (grocery store)
Peaches (Farmer's market)

It seems like I've told this story before, but when Grancey and I lived in Iowa 10 years ago we visited the Hy-Vee Food Pavillion at the Iowa State Fair every year. There was always this hilarious display called "Ethnic Foods from Around the World" and you could visit little tables that featured Mexican food and Asian food and Indian food, etc. The best table was the one called "Southern Food" and it was loaded with things we'd never heard of before, plus the obligatory fried green tomatoes, grits, cornbread, okra, and black-eyed peas.

The first time we ever saw it we just stared at it with our mouths hanging open until I said, "Dear - we're ethnic now."

I like brussel sprouts. Don't love 'em like I love my asparagus and broccoli, but they're still good.

I despise lima beans. When I think of lima beans, I think of the pot of beans my mother made every week while I was growing up, and the nasty, mushy mess that the lima beans made. We put ketchup in the nasty, mushy mess to make it a bit more palatable. Just reading that last sentence makes me want to ralph.

As far as other veggies go, I prefer fresh, but usually buy frozen for convenience. I will NOT buy canned veggies. They taste disgusting and have very little nutrional value, anyway. The only veggies I really hate are bell peppers (I like spicy peppers), okra, and onions. Sadly, I probably only eat one - maybe two - servings a day...I know I should eat more, but I don't. I need to work on that.

Mushy veggies, especially peas and lima beans, are disgusting and have been cooked too long. Optimally, vegetables should be prepared to a palatable tenderness. You don't want to taste the rawness, but you still want the flavor of the veggie without the watery mush.

I don't avoid vegetables on purpose... we just don't buy them very often, because they end up rotting in our fridge for weeks afterwards. The most adventurous I usually get is a bagged salad, which pressures me to eat it quickly before it turns to mush. I would eat vegetables if they were in front of me, but I'm not keen on cooking them, nor is my husband. I'm lucky if I get my daily serving of vegetables in a week's time... :shy: I know, I know!!!

I do love me some pickled (I think) red kale/cabbage... Scandinavian style, and goes so well with most dark meats. Mmmm!!

I suppose the best thing would be to stock up on frozen vegetables, but I've heard that they aren't very good for you... nor are canned foods. Of course, at the rate I'm going, it would probably help if I ate ANY kind of vegetable, regardless of how it's stored. :shy:

No strong opinion on lima beans, but I really dislike brussel sprouts. My husband, however, took quite a liking to them last year... so I made myself eat some at the time. But I don't like them.

If I had to pick a favorite vegetable, it would probably be broccoli... you can include it with just about any meal. Too bad it's so expensive (and crappy quality) in Iceland. :(

Yay, it's almost yam/sweet potato season! I ate a bunch of sweet potatoes last fall. They are healthy comfort food.

I'm not commenting on people peeing red, beer being a veggie, or cheese-by-state.

You all are doing a great job of making this thread about as focused as it gets.

I probably eat 1-2 servings of vegetables a day. I used to eat more, but now I teach during the dinner hours 3 days a week.

Related to the roasted veggies discussion above, I really like roasted parsnips. I had them for the first time last year. I usually cut them into chunks with chunks of carrots & onions, toss them all in olive oil and spices, and roast 'em in the oven. Very tasty.

Ooooo I have a bamboo steamer and I *love* to steam broccoli and asparagus and green beans and carrots and cauliflower....

Tonight I made a kickass stir fry for dinner with peppers, broccoli, mushrooms (not a vegetable, I know, but still yummy!), and a whole eggplant. Mmmm I freakin' LOVE eggplant...

I give my son fresh or steamed vegetables and fruits at every meal. His favorite is broccoli (pronounced bwaaaaaaaaaaaaaaaaaaaaaaaaa-klee!).

Frozen veggies are alright in a bind, but I can't stand canned veggies. Yuck.

Frozen veggies work best for me, I can easily grab a handful, toss it in soups/couscous and have an instant serving with no effort. I always keep a bag of spinach or broccoli around; thaw and scrambled with an egg and topped with skim riccotta and roasted (or fresh grated) garlic.

I love brussel sprouts now! Cut them in half, toss with olive oil and salt, roast in an oven for 45 minutes. Toss that into balsamic vinegar, chopped walnuts and pepper, and dig in.

After a good scare from my doctor regarding my high cholesterol and fatty liver (at 21!), I eat any and all vegetables I come across. In 2 years I've dropped 3 pants sizes, 40 lbs, and cholesterol and liver are good and healthy. I haven't quite cut out all my guilty meals (Chili Tamales from Tommy's), but I'm trying to compensate with my veggies, raw almonds and Yogurt (with active cultures of course).

Garbonzo beans! Pureed with lots of garlic into delicious hummus. I make sure I'm not around the general public after consuming this, though. Brings tears to my eyes.

I'm having a tough time getting my gf to eat healthy. She doesn't cook, outside of frozen potstickers. I have managed to get her to eat plain yogurt, and avoid chips and cookies. When she's not looking, I toss out her soda, or sneak in some ground flax meal in her smoothies. I haven't quite sold her on prunes yet. =)

Honestly, I eat very few vegetables.

I do take multivitamins, and whatever is in protein shakes, energy bars, and other health food riff-raff, but without supplementing my diet I would probably have scurvy or worse.

It is too easy for me to go out to lunch with the guys and the eat again on the way home from work. Also, I have a fast metabolism and I have a relatively physical job. I am always hungry and salad never seems to satiate me. I find myself reading the nutrition information on foodstuffs to make sure I am getting enough calories....nutritive content takes a back seat to simply getting the energy I need.

The sad part is that even eating double what most people (under about 300 pounds) consume I still can't put on weight. Go figure.

I'm a vegetarian, but I don't have a very subtle sense of taste, so I tend to spice everything up with either balsamic vinegar, flavoured extra virgin olive oil, herbs, garlic, or various kinds of chilli peppers. Delicious. :thumbsup:

Calories are one thing, but having the vitamins and minerals to do such things as access energy, maintain immunity, heal, etc. is probably more important. A multivitamin is good as an insurance policy, but aren't quite the same as the real deal. Vegetables should be as fetishized as cell phones if we are to move forward as a healthful and happy people.

Those singles would never be enough for this household, lol, but I do like those steamer bags. They work well.

I just made homemade salsa in my new food processor yesterday. It came out delicious...only thing is I have about a gallon of the stuff now, heh...salsa with every meal!

Oooh. If I had a food processor, I would make so much salsa every summer. I love love love tomatoes and peppers from the farmer's market. Luckily for me, one of the organic farms I love in this area makes their own salsa and sells it in tubs down at the market. I also like all kinds of weird salsas--I'd love to make my own mango salsa sometime.

What kind of salsa did you make, MM?

Lima beans are pure joy. Did you know that lima beans were actually pixy lungs? They are. They compliment so many different things and are even delicious on their own.

Brussels sprouts, on the other hand, are the devil's testicles. I can't imagine eating them without someone holding a gun to my head. The sickly sweet taste reminds me of what happens to crab meat left out during a nuclear holocaust. They're almost as bad as beets.

I know I love it, too.

I made a very simple tomato salsa - tomatoes, onions, jalapeno peppers w/ fresh cilantro, oregano and lime juice. It's very yummy, though. I just had some more and it got even better overnight. :)

C-Daddy: At Thanksgiving I ate this mess of brussel sprouts sauted with French's mustard and soy sauce. It looked just awful, but I felt compelled to try it because it sounded so unusual. I was assurred it was tasty, and indeed it was. I am still working on recreating the recipe. In addition my Aunt Sylvie used to make fab limas, and I would often request she make them for my birthday. I am a veggie kind of girl preferring them canned or fresh, and eat some variety daily.

PS: Have you sneaked into the ladies only forum? I thought so when I saw your posting title.

i can handle and semi-enjoy a little lettuce/dressing, spinach, or spring peas... but thats about it.

i can't stand squashes, peppers, most kinds of green beans incl lima, brussel sprouts, and even raw tomatoes, although they're good in pasta sauce cooked.

Favorites include carrots, celery, cabbage, lima beans (beans in general), broccoli, cauliflower, bell peppers, avocados, squash, zucchini, etc etc etc.

I also really like fruit.

But never, ever, underestimate the power of a good steak on me. Mmmm, steak.

Oh yeah, I like my veggies fresh. If I won't be able to eat them before they go bad, I chop 'em up and stick 'em in the freezer. I don't do canned very often.. usually just for kidney beans, green beans, and corn.

I eat almost any vegetable, and tons at that. The one vegetable I can't abide is ladies' fingers / okra. I don't like swedes either (the vegetable that is. Young Swedish ladies are ok)

Lima beans are your friends. They are. I asked.

Ok... let's get some things straight.

Lima beans are NOT vegetables. Vegetables are any vegetative (as opposed to reproductive) part of a plant. Now, people will look at you funny if you call a lima bean a fruit. But that's what it is. So avoid the confusion and call it something else, which it is: a legume.

A potato is a tuber. It is not a root. It is a starchy deposit attached to a root. You can call it a vegetable and not be wrong. It provides none of the healthy benefits that we typically associate with green, leafy vegetables.


On this note:
I love fruits and vegetables.
I don't eat very much that isn't derived from plants. My lunch today, for instance, was a potato bread sandwich with tomato sauce, garlic, fresh spinach, and a veggie burger patty. I do eat eggs and cheese. So I can't say that I'm entirely an herbavore.

I will gladly pass over just about any other food for a fruit/vegetable.

I am a huge fan of brussels sprouts. Unfortunately they are expensive so I often choose less expensive veggie and fruit goodies in their place.

List of fruits often called vegetables (which I love):
squash
cucumber
(notice those two are Cucurbitaceae?)
tomato
eggplant
peppers
(notice these three are Solanaceae?)
lentils
beans
peas
(notice those three are Fabaceae?)

Yummy Roots:

Carrots
Beets
Yams (the orange ones, not sweet potatoes)

Yummy shoots (stems and/or leaves):

Spinach
Cauliflower (tries to bloom, but its genes tell it to make stems instead of flower whorls)
Chard
Mustard
Collared greens
Lettuce
Sweet potatoes (the white ones, not yams)

Know your veggies, fruits, roots, and other healthy goodness. Don't tell a kid to eat their vegetables when they're passing up a plate of peas. 'cause you're wrong.

Vegetable is a culinary and traditional term, it has nothing to do with botanical definitions or plant science.

I just made a wrap. It was a whole wheat flour tortilla. Inside was an entire baby bok choy (chopped), veggie meatballs, tamari garlic sauce, dijon mustard, and Parmesan cheese.

For a side, I had half a head of broccoli, four pepperoncini peppers, Parmesan cheese, and sesame dressing.

In a word: Yum.

Love, love, love veggies. I'd joined a CSA to get my share of locally grown, organic veggies. We got to experiment with all sorts of unusual and heirloom varieties. Japanese eggplants, baby bok choi, tomatillos, and, of course, bushels of tomatoes!

Steamed, stir-fried, or diced up raw in a salad. YUM!

I always keep canned corn, canned black beans, canned kidney beans, canned refried black beans, canned refried pinto beans, canned corn, canned red beans, and canned green beans on hand, in addition to cans of tomato sauce, stewed tomatoes, diced tomatoes, etc. I have a fairly well-stocked pantry, sheerly out of fear of the apocalypse. I try to have veggies every day. Sometimes I succeed, sometimes not.

I mostly eat fresh vegetables carefully cooked: asparagus and broccoli either steamed or roasted until bright green (in either case, usually with plenty of garlic), cauliflower roasted until browned or sauteed until soft (heavy on the garlic again), cabbage sliced fine and curried, squash (big yellow/orange, not like zucchini or crap like that, and roasted or baked), yams, fennel (both roasted, but not together), snow peas, snap peas, haricots verts (all steamed very, very briefly, just until the color begins to brighten)....

I am big on some raw veggies, too: I live for Jicama! I love it. Also like carrots, celery. Can't abide salads.

In a pinch, frozen veggies will do, especially for cooking in mixed dishes. Generally I'm pretty insistent on fresh. And vegetables should never, ever come out of a can or a jar!

Brussels Sprouts: very hard to cook in such a way as to make them tasty. But it is possible. I've had a few Sprouts dishes that were delicious, several of which I've been able to replicate.
Lima Beans: Hopeless. Unsalavageable. Horrible texture no matter how they're cooked. Awful flavor.

Again, so jealous. I love hummus, because it's a dip that's actually good for you. It's a versatile food. I put it on tortilla chips, pretzels, carrot sticks, celery, turkey sandwiches, pitas, pita chips. I'll have to remember to get some next time I go to the food co-op. I may not have a food processor, but they sure do, and they make some rockin' hummus.

We like it with black olives. :)

And we make our own pita chips. It's really easy. Just take traditional pita pockets (we use whole wheat) cut them into squares and triangles, spray with a little olive and sprinkle with salt & fresh cracked pepper.
