No Sir, don't like em...

i can handle and semi-enjoy a little lettuce/dressing, spinach, or spring peas... but thats about it.

i can't stand squashes, peppers, most kinds of green beans incl lima, brussel sprouts, and even raw tomatoes, although they're good in pasta sauce cooked.

I love zee vegetables!

Favorites include carrots, celery, cabbage, lima beans (beans in general), broccoli, cauliflower, bell peppers, avocados, squash, zucchini, etc etc etc.

I also really like fruit.

But never, ever, underestimate the power of a good steak on me. Mmmm, steak.

Oh yeah, I like my veggies fresh. If I won't be able to eat them before they go bad, I chop 'em up and stick 'em in the freezer. I don't do canned very often.. usually just for kidney beans, green beans, and corn.

Veggies are fine fresh or frozen, no canned veggies though. I guess I do like the canned, pickled beets on salad. Otherwise none in a can.

And I think a potato is a vegetable, a starchy one but a veggie.

Brussel sprouts are awesome stir-fried with bacon, onions and garlic.

I eat almost any vegetable, and tons at that. The one vegetable I can't abide is ladies' fingers / okra. I don't like swedes either (the vegetable that is. Young Swedish ladies are ok)

Lima beans are your friends. They are. I asked.

Ok... let's get some things straight.

Lima beans are NOT vegetables. Vegetables are any vegetative (as opposed to reproductive) part of a plant. Now, people will look at you funny if you call a lima bean a fruit. But that's what it is. So avoid the confusion and call it something else, which it is: a legume.

A potato is a tuber. It is not a root. It is a starchy deposit attached to a root. You can call it a vegetable and not be wrong. It provides none of the healthy benefits that we typically associate with green, leafy vegetables.


On this note:
I love fruits and vegetables.
I don't eat very much that isn't derived from plants. My lunch today, for instance, was a potato bread sandwich with tomato sauce, garlic, fresh spinach, and a veggie burger patty. I do eat eggs and cheese. So I can't say that I'm entirely an herbavore.

I will gladly pass over just about any other food for a fruit/vegetable.

I am a huge fan of brussels sprouts. Unfortunately they are expensive so I often choose less expensive veggie and fruit goodies in their place.

List of fruits often called vegetables (which I love):
squash
cucumber
(notice those two are Cucurbitaceae?)
tomato
eggplant
peppers
(notice these three are Solanaceae?)
lentils
beans
peas
(notice those three are Fabaceae?)

Yummy Roots:

Carrots
Beets
Yams (the orange ones, not sweet potatoes)

Yummy shoots (stems and/or leaves):

Spinach
Cauliflower (tries to bloom, but its genes tell it to make stems instead of flower whorls)
Chard
Mustard
Collared greens
Lettuce
Sweet potatoes (the white ones, not yams)

Know your veggies, fruits, roots, and other healthy goodness. Don't tell a kid to eat their vegetables when they're passing up a plate of peas. 'cause you're wrong.

I'm going to argue with you here.

Vegetable is a culinary and traditional term, it has nothing to do with botanical definitions or plant science.

I sauteed some brussels sprouts last night with olive oil and garlic. Mmmm. :)

I just made a wrap. It was a whole wheat flour tortilla. Inside was an entire baby bok choy (chopped), veggie meatballs, tamari garlic sauce, dijon mustard, and Parmesan cheese.

For a side, I had half a head of broccoli, four pepperoncini peppers, Parmesan cheese, and sesame dressing.

In a word: Yum.

Love, love, love veggies. I'd joined a CSA to get my share of locally grown, organic veggies. We got to experiment with all sorts of unusual and heirloom varieties. Japanese eggplants, baby bok choi, tomatillos, and, of course, bushels of tomatoes!

Steamed, stir-fried, or diced up raw in a salad. YUM!

I sometimes eat canned corn, peas, and beans because they store really well.

I also like some MREs. This may hint at my idea of what tastes good.

And they're CHEAP.

I always keep canned corn, canned black beans, canned kidney beans, canned refried black beans, canned refried pinto beans, canned corn, canned red beans, and canned green beans on hand, in addition to cans of tomato sauce, stewed tomatoes, diced tomatoes, etc. I have a fairly well-stocked pantry, sheerly out of fear of the apocalypse. I don't know what kind of fresh vegetables I'll be able to get after the apocalypse, so I'm prepared with all my canned goods.

Don't care for canned veggies either.
Corn, sweet peas, string beans, most legumes, potatoes and yams can share the plate with tasty chunks of beef, pork and chicken. Salad only under protest, although I do enjoy peppers, cucumbers, celery and tomatoes.

I try to have veggies every day. Sometimes I succeed, sometimes not.

I mostly eat fresh vegetables carefully cooked: asparagus and broccoli either steamed or roasted until bright green (in either case, usually with plenty of garlic), cauliflower roasted until browned or sauteed until soft (heavy on the garlic again), cabbage sliced fine and curried, squash (big yellow/orange, not like zucchini or crap like that, and roasted or baked), yams, fennel (both roasted, but not together), snow peas, snap peas, haricots verts (all steamed very, very briefly, just until the color begins to brighten)....

I am big on some raw veggies, too: I live for Jicama! I love it. Also like carrots, celery. Can't abide salads.

In a pinch, frozen veggies will do, especially for cooking in mixed dishes. Generally I'm pretty insistent on fresh. And vegetables should never, ever come out of a can or a jar!

Brussels Sprouts: very hard to cook in such a way as to make them tasty. But it is possible. I've had a few Sprouts dishes that were delicious, several of which I've been able to replicate.
Lima Beans: Hopeless. Unsalavageable. Horrible texture no matter how they're cooked. Awful flavor.

Again, so jealous. I love hummus, because it's a dip that's actually good for you. It's a versatile food. I put it on tortilla chips, pretzels, carrot sticks, celery, turkey sandwiches, pitas, pita chips. I'll have to remember to get some next time I go to the food co-op. I may not have a food processor, but they sure do, and they make some rockin' hummus.

We like it with black olives. :)

And we make our own pita chips. It's really easy. Just take traditional pita pockets (we use whole wheat) cut them into squares and triangles, spray with a little olive and sprinkle with salt & fresh cracked pepper.

Three cheers for yummy things that come from the ground, be they veggies, fruits, legumes, whatever... broccoli, cauliflower, lettuce, spinach, lentils, string beans, black beans, beans of every shape and kind, peppers, cucumbers, zucchini, snow peas, sugar snap peas, carrots*, sweet potatoes, avocados, tomatoes, asparagus, eggplant, celery, yum.

*I prefer my carrots raw, especially baby carrots. My cousin jokes that eating cooked baby carrots is like eating fingers, and I have to say I agree.

I love vegetables. While there may be some I like more than others, I'd try anything once. I love broccoli, carrots, green beans, squash, corn (especially sweet L.I. grown corn), anything that you can put in a salad... I like that having a vegetable as a side dish prevents me from overeating things like pasta (which is very easy to overeat). I prefer fresh vegetables (from local farm stands), but due to time restraints, I use frozen veggies most of the time. Canned veggies are not allowed in my house - none of us will eat them. blech.

I have never had brussel sprouts, but I'd try them if someone made them for me. Same goes with lima beans. I remember having them in a mixed vegetable thing my mom used to make. It had lima beans, carrots and something else. I'd pick out the limas, their reputation preceded them and I assumed I'd hate them.

I am not sure what the daily allowance of vegetables is, but I try to have them at least once a day. If I remember to drink my daily V8, then I am lucky and have more than one serving of veggies that day.

If you have problems with vegetables, go to Europe, Italy or France in particular; you'll eat EVERY SINGLE VEGETABLE put in front of you because they taste that much different, better over there.

Case in point: growing up in an Italian household, pasta with zucchini was a staple. The zucchini is stewed a bit with garlic and some tomato and basil and served with short pasta somewhat like a soup. It's not my favorite and wasn't growing up. However, when my mom makes it when we're in Italy, it's mindblowing how good it is.

Also, because of the upbringing, vegetables were a non-issue for me. Escarole, cabbage, broccoli, rabe, swiss chard, squash, zucchini, eggplant, green peas, chick peas, green beans, kidney beans, fava beans, black beans, etc., etc. I ate them all or I didn't eat. And as I got older and my mom became a better and better cook, I eat them with genuine zeal.

But I digress... Have a problem with lima beans? Try sautéing them with onion and a bit of bacon in olive oil until they are tender. Funk removed, trust me. Brussel sprouts? Try braising them in butter and sage or rosemary (make sure you par boil both the beans and sprouts first). Canned beets? Pft... buy 'em fresh, cut off the greens, wash them, drizzle with olive oil and a bit of salt, wrap in foil, and bake at 375F for 2 hours. You'll never want to deal with that pickled nonsense again and they freeze amazingly well!

If prepared tasty I eat lot of vegetables. My intake can go upto 400 gms daily basis. But there are times when I crave for non-veg and during those times my veg intake goes down. But springs back soon to normal.

I dont consider potatoes as vegetable.

My favorites are Radish, green beans, carrots, brinjal, egg plant, drumsticks. All other vegetables too I eat. As a small boy the only veg i use to NOT like is bittergaurd, now a days I like that too.

I dont prefer canned veg. Frozen is ok. Raw is preferred.

that is exactly how I like to eat Broccoli, cauliflower, carrots. however other vegetables i prefer to be cooked with some gravy or pan fried (veryless oil). My wife cooks very nice.

We eat cucumbers plain. Also carrots. We also mix either of them in small granules in curd and have. It is lovely.

Back in 2002 when I was in Atlanta, I use to visit Farmers market to buy fresh produce. In WA I am yet to try that.

These days I've been trying to do the following:

Set up the blender and stuff as many veggies into it as possible along with: ground oatmeal and flaxseed, protein powder, peanut butter, and frozen fruit.

Veggies/fruits that I've enjoyed so far have involved a combination of: spinach, avocado, celery, bell peppers, carrots, cucumbers, banana, mango, strawberries. I figure the more watery veggies work best, and it helps to enjoy eating the veggies raw normally.

I want to try to keep a "base" of a leafy green veggie such as spinach. I also want to try kale, collard greens, and Swiss chard. I'll be tackling a head of romaine lettuce starting tomorrow.

I put all this stuff together, and then I blend the shit right out of it.

I'm trying to get into the habit of having one of these a day. I figure they make good pre-workout or off-day recovery shakes.

I find that having flavoured whey power, oatmeal, fruit, and fatty foods such as flaxseed, peanut butter, and avocado make the shake very palatable despite all the raw veggie action.

I've tried it both with milk and with water only, and I find either one to be tasty enough. I eyeball the proportions, but I try to get about a 1/2 cup of oats and 2 tbsp of flaxseed (before grinding), and a half of an avocado. And a good handful of leafy greens. The rest I more or less balance out equally until the damn blender is full.

It's way cool to watch it get reduced to a green/brown gooey delicious powerhouse of a drink.

My Girlfriend eat A LOT of vegetable and fruit, like from 3/4 to 10kg per week in summer...
I never learned how to cook them properly and never took the habit and for now I practically eat only salad...

I loves the vegetables. Haven't come across a bean that I don't like. The less flavorful ones usually get a little smoked meat or flavoring in there to add taste. Love the greens... not particularly the mustard greens or kale, but definitely spinach, collards, lettuces, etc. Raw (except collards) or steamed, stir-fried, or straight up fried. Tomatoes, broccoli, cauliflower, squashes, even cabbage, lately, when cooked right. I don't like most pickled veggies unless they're meant to be that way. Like dill pickles. I dislike mushrooms most of the time but I'm learning to eat portabellos on pizza or when cooked with strong flavors... it's a combination of the earthy flavor and the texture of the 'shrooms. I'm also teaching myself to eat red, orange, and yellow peppers but the green ones are just beyond me. No previously-frozen red ones shall pass my lips, either. Too many years of Lean Cuisines. I'm not a fan of water chestnuts or bamboo shoots sometimes. Everything else is fair game for the most part.

I like my veggies raw, steamed, sauteed in something light, or stir-fried. The only canned veggies I'll touch are beans, very early peas, artichoke hearts (jarred), and white sweet corn. Frozen edamame, pearl onions, spinach, and occasionally grits are for recipes. I use a lot of herbs, seasonings, spices rather than sauces. But I did find an awesome recipe for cheddar cheese sauce that I added yellow curry to and will make my SO eat an entire head of broccoli. :)

This thread forced me to snatch a head of broccoli and begin gnawing away all of the florets. I adore vegetables. I can be finicky with squash and zucchini if they're poorly prepared, but aside from that, no vegetable has ever evaded my taste buds on account of its flavor.
