Edinburgh Castle is about the best castle in Britain. Edinburgh is a wonderful, walkable town - Royal Mile, etc. The various abbeys in the south including Rosslyn and Jedburgh are great. Deep Sea World if you have kids is a hoot (even for adults interested in an amazing aquarium). St. Andrews, Stirling and Loch Lomond are all worth a look in the south. Haven't been north yet, so I can't comment much on that. Go on a distillery tour, you learn more about scotch in a day than you would in a year anywhere else.
