kroepoek - what is it - how does it work?
kroepoek is fun to eat. A type of cookie - hard for me to describe.
It is seasoned tapioca flour. But how it is processed is a mystery! Please! I know you drop it in hot oil - I've made it many times. My question is: what is being dropped in hot oil? My guess is that the flour is mixed with water and flavors. Then cold pressed under great pressure into a flat shape. My attemps to make the basic stuff has only made a gooey mess :-) |
