Fable. Although I guess that came out this week, it was still VERY highly anticipated.
If you count MMORPG's there's World of Warcraft and EQ2 later this year as well.

Dragon Age and Neverwinter Nights 2. They will be coming out in '05 and '06 respectively. Personally I'm more interested in NWN2, but Dragon Age looks really cool.
