^ yum! One of my favorite Hungarian delicacies is a type of headcheese they call "schwartli", not sure of the spelling. It's got more blood in it than the one above, and also paprika. I ate a bunch of it this past weekend when I was visiting my Hungarian relatives in Cleveland. Wish I could get it in Philly...must search.
