I like pepperoni. Hoever, most brands found in the average grocery store are atrocious. I expect a pepperoni to be dry and hard. I find Hormel's offerings to be particularly offense.
When you take a bite from a stick of pepperoni, the skin should criply snap and part without shredding. The pepperoni should be very dry, almost without grease. If you want very good pepperoni, look for an Italian pork store of long standing. Otherwise, look for some store wrapped sticks of a brand name pepperoni that has been allowed additional hanging time (longer drying make it better). It should be much thinner and have a wrinkled, uneven apperance.
