...and once in a while it also enjoys a heaping bowl of Tiết canh Tiết canh is a traditional dish of blood in Vietnamese cuisine.Tiết canh is made from raw duck blood, put in a shallow dish along with finely chopped cooked duck innards (such as gizzards), sprinkled with crushed peanuts and chopped herbs such as Vietnamese coriander, mint, etc. The finished dish is left to cool in the refrigerator, which allows the blood to coagulate, making the mixture look like a pizza in a sense. After the blood has set and the dish is removed from the refrigerator, the tiết canh is eaten immediately. The blood will return to a liquid state if left to sit at room temperature. |
