No, you don't have to be Jewish.

The Israeli army drafts Israeli citizens who are Jewish or whose communities (groups agreed to participate in the draft - like the Druze).
Other than that anyone can volunteer (I assume that there is some vigorous acceptance procedure to verify intentions - actually that is probably the case for the drafted as well).
