Easy Coconut Curry Sauce
I made this for a baby shower over the weekend and it got rave reviews and many requests for the recipe.. It's super easy too...
Coconut Curry Sauce 2 tsp olive oil 2 teaspoon crushed red pepper flakes (I like it spicey- use less if you don't have a teflon mouth) Zest of 1 lemon 4 cloves garlic, minced (I am a garlic addict, use less if you don't have the love) 2 TBS curry powder 1 12 ounce can light coconut milk (use the light, the regular is too heavy and too sweet) 2 tablespoons soy sauce 1/2 cup chopped fresh basil leaves, shredded (recipe called for sugar and salt, I passed on both) Over medium-high heat. Add red pepper flakes, lemon zest, garlic, curry powder and the oil, heat for about a minute or so until fragrant. Add the coconut milk and soy sauce and cook, stirring occasionally, until the sauce thickens slightly, about 1 1/2 minutes. Add the basil last minute.. Serve over whatever... I basically used it as a curried swedish meatball recipe... I made meatballs out of Ground chicken and pork, and mixed in some seasonings (cumin, red pepper flakes, basil and whatever else struck my fancy..) cooked the meatballs in the oven til done and served the meatballs in a crockpot in the sauce... but the sauce itself could be used over chicken and veggies over rice or whatever...

Sounds delicious, but hubby hates coconut I may make it anyway when he's gone or something.
