Easter Recipes
So, tomorrow is Easter, and for the command performance for the family dinner, I got suckered into making one of my most favorite of Easter dishes... I live in a very Italian area, so I believe it's a tradional Italian easter thing, but,this Irish lass somehow manages to pull it off...
Maleficent's Pizza Gain.. aka Yummy Pizza Rustica or Italian Quiche Crust 2 cups all purpose flour 3/4 teaspoon salt 2 sticks unsalted butter, cut in cubes 2 eggs Filling 6 eggs pepper to taste 8 ounces ricotta cheese (fresh if you can get it) 4 ounces shredded mozzarella cheese 4 ounces proscuitto, julienned 3 ounces Genoa salami, julienned 3 ounces Capicola, julienned (Virginia ham will do it it's place 1/2 med sweet onion, diced (the filling ingredients, are sort of whatever makes you happy to put in, put it in) The proscuitto is very salty, I'd use a low salt mozarella and ricotta if you can get 'em. you could substitute out the meats and use cooked veggies instead, mushrooms are really nice in it. Mix flour and salt and place in bowl of a food processor. Add butter cubes, one at a time to dough. After each cube pulse food processor just enough to work in butter. Do not overwork or dough will toughen. Dough should resemble coarse meal. Add eggs. Pulse dough until it comes together in a ball. Cut dough in half so that one half is slightly bigger than the other. The smaller half will be the top crust. Wrap each in plastic wrap and rest dough for an hour in fridge. When dough is almost done resting, preheat oven to 350°F. Make filling: Beat eggs with pepper. Blend cheese into eggs. Shred or slice meat, or put in food processor for a finer textured pie and add to egg/cheese mixture. Roll out larger piece of dough on a floured board until it will fill a 9-inch pie shell. Add filling. Roll out smaller piece of dough until it will cover top. Crimp around edges to seal it. If you'd like, you can brush the top with an egg wash, (beaten eggs). This will give it a sheen when it bakes. Finally, poke holes or slits in the top crust to allow the steam to vent. Cook in preheated 350°F oven or 45 minutes.

I was gonna make colored eggs. but quite frankly I can't stand the smell of hard boiled eggs and it was just too much work -- I did the next best thing...
Rice Krispie Treats 3 tbsp. butter 4 cups minature marshmallows 6 cups Fruity Pebbles cereal (makes for nice easterish colors) 1 package of white chocolate chips sprinkles and assorted decorating thingies Popsicle sticks Melt margarine in large saucepan over low heat.Add marshmallows and stir untill completely melted. Remove from heat. Add cereal. Stir until well coated. Using buttered spatula or waxed paper, press mixture evenly into 13x9x2 inch pan coated with cooking spray. cut into 2 inch squares when cool. ---------------- Melt chocolate on top of double boiler Skewer Krispy treat with popsicle stick and dunk in white chocolate decorate with sprinkles or whatever and let chocolate harden
