A Few Simple Sauces
This thread is in response to a specific request.
<center>Hollandaise Sauce</center> Ingredients 3 egg yolks 1 1/2 tablespoons fresh lemon juice 4 tablespoons unsalted butter, chilled 3/4 cup unsalted butter, melted salt to taste 1 teaspoon ground white pepper Directions Add egg yolks to a small saucepan; whisk until lemon yellow and slightly thick, about 1 minute. Whisk in lemon juice. Add 2 tablespoons cold butter, and place over very low heat. Whisk constantly while butter is melting, and continue whisking until thick enough to see the pan between strokes. Remove pan from heat, and beat in 1 tablespoon cold butter. Repeat. Whisk in melted butter a little bit at a time. Season with salt and white pepper to taste. <center>Wine Meat Sauce</Center> Ingredients 2 tablespoons beef drippings 2 tablespoons roasted garlic 1 1/2 cups good table wine wine 3 tablespoons clarified butter 3 tablespoons chopped fresh parsley Directions Add garlic to drippings in pan; cook and stir for 2 minutes. Add wine; stir, scraping the bottom of the pan to deglaze. Boil, stirring constantly, until syrupy. Remove from heat. Add 1 tablespoon butter, and stir until the it melts. Repeat with remaining butter. Stir in parsley, and serve. <center>Teriyaki Sauce</center> Ingredients 1/4 cup dark soy sauce 1/4 cup sake 2 tablespoons mirin (Japanese sweet wine) 1 tablespoon brown sugar 1 tablespoon roasted garlic 1 teaspoon grated fresh ginger 1 tablespoon chopped green onion Directions Combine soy sauce, sake, mirin and sugar in a small saucepan over medium heat and stir until sugar is dissolved. Then add ginger, onion and garlic. Can be used immediately or cooled and refrigerated. <center>Spaghetti Sauce</center> Ingredients 3 tablespoons butter 1 tablespoon roasted garlic 16 roma (plum) tomatoes, chopped 1/2 cup chicken stock 1/3 cup dry vermouth 2 tablespoons fresh basil, chopped Directions In a large saucepan, melt butter over low heat. Toss in garlic and saute 1 to 2 minutes, until slightly golden. Mix chopped tomatoes into pan. Stir in chicken stock, thinning with 1 to 2 tablespoons water if necessary. Cook over medium heat until bubbly. Stir in Vermouth and cook 5 minutes more. Mix in basil just before serving. <center>Barbeque Sauce</center> Ingredients 1/2 cup ketchup 1/4 cup blackstrap mollasses (regular will do fine) 2 tablespoons brown sugar 2 tablespoons Worcestershire sauce 1 tablespoon apple cider vinegar 1 dash hot pepper sauce 1 tablespoon roasted garlic 1/4 teaspoon mustard powder 1/4 teaspoon salt Directions In a small saucepan over medium heat, combine the ketchup, brown sugar, Worcestershire sauce, vinegar, hot pepper sauce, garlic powder, mustard powder and salt.
