Homeless outreaches
I’ve recently started to do some outreaches, making and getting food to shelters, right now, we do burritos and pasta, do you guys know any other recipes that are easy to make lots of. I saw that Lasagna was just posted, that will do nicely.
Any other suggestions are appreciated Thanks ~dil

veggie soup is one I always used to make for one of the shelters in Atlanta, real easy to do in quantity......cornbread too

Baked Ziti is a big crowd pleaser and is a little less time intensive than lasagna is.
You can adjust the amounts but it's 1 box of ziti pasta cooked according to package directions 1 large bottle of pasta sauce (or m ake your own) 1 lb of ground beef/pork/veal mix (or any combination) browned 1 lb of ricotta cheese 1 lg package of mozerella cheese grated. 8 oz parmesean cheese (herbs and spices as appropriate) Mix all ingredients in a large baking disk, except parmesean cheese. Sprinkle parm on top (or use mozarella) Bake, covered, at 350 for about an hour until everything is heated thru and cheese is all melty. Uncover for about 15 - 20 minutes, until cheese lightly browns. Serve and enjoy (this recipe I have easily tripled with pasta, and used less meats. you could also add in vegetables if you wanted to -- like spinach , or zucchini, or eggplant) It also travels well

Get alot of rolls of bread, or you can make the bread. Have hummus as dip for the bread. I worked at a soup kitchen, and the "clients" enjoyed them. Give them salad and alot of fruits too.

Sausage and Peppers is also pretty good in a crowd and it also travels well (Just needs to be kept warm)
1 lb sweet sausage, cut into 1 inch pieces 1 lb hot sausage, cut into 1 inch pieces 2 large onions, cut in large chunks 2 green peppers cut in large chunks 2 red peppers cut in large chunks 2 cans stewed tomatoes (you can use the fancier ones that have basil and such in the sauce) 6 - 10 cloves of garlic (I like serious garlic -- use less if you don't have a fear of vampires) Cook sausage in skillet or in oven til almost done. Drain 97 percent of the grease. Put onion and garlic in pan and cook in grease until wilted, add green peppers, add sausage and cook until peppers are not mushy but lose the raw flavor. Serve on rolls or over pasta.

This one I've done a lot too, mushrooms might be a little too exotic for some tastes, but the polenta is easy, economical, and easy.. and you could always put a different topping on it for variety.
8 slices ready to serve polenta (I'm lazy, and my local deli sells it this way - -but regular polenta is just corn meal, water, a little butter and salt just cooked until it's creamy) splash olive oil 1 pound fresh mushroom mixture including small Shiitakes, criminis, oysters and whites 1 cup dry white wine 1 tablespoon chopped fresh rosemary hearty dose of ground black pepper Preheat grill or broiler until hot. Lightly brush olive oil on both sides of polenta slices. Place on a grill rack or broiler pan; grill or broil until golden, about 4 minutes, turning once; remove and keep warm. Trim mushroom stems and slice mushrooms, if necessary. In a medium skillet, over medium heat, heat remaining oil. Add mushrooms; cook and stir until lightly browned, about 2 minutes. Add wine and rosemary; simmer until reduced by half, about 3 minutes. Stir in salt and pepper. Place 2 polenta slices on each plate; top with mushroom mixture, dividing evenly. Serve immediately.
