Sausage and Peppers is also pretty good in a crowd and it also travels well (Just needs to be kept warm)
1 lb sweet sausage, cut into 1 inch pieces
1 lb hot sausage, cut into 1 inch pieces
2 large onions, cut in large chunks
2 green peppers cut in large chunks
2 red peppers cut in large chunks
2 cans stewed tomatoes (you can use the fancier ones that have basil and such in the sauce)
6 - 10 cloves of garlic (I like serious garlic -- use less if you don't have a fear of vampires)
Cook sausage in skillet or in oven til almost done. Drain 97 percent of the grease. Put onion and garlic in pan and cook in grease until wilted, add green peppers, add sausage and cook until peppers are not mushy but lose the raw flavor.
Serve on rolls or over pasta.
