Mmmm, second supper.
Two cheese quesadillas and two scrambled eggs.
Quesadillas: Flour tortillas Cheese (Monterrey Jack or Colby Jack work best for my taste) Butter Put a frying pan on the stove at medium-to-low heat. Spread a thin layer of butter on the back of as many tortillas as you want quesadillas. Put two butter-side down in the pan. Add cheese on top, then fold them over to make a pocket. Be careful not to burn yourself. When the cheese starts to melt inside, flip each pocket over to cook the other side. If your heat is set right then the tortilla will puff up and this is a good indication that your quesadillas are done. Scrambled eggs, my way: 2 Eggs Butter Salt + Pepper Break the eggs into a bowl. Mix them up (scramble them) well, adding salt and pepper to taste. Turn the stove on low heat. Plop a small bit of butter in the middle of the pan. Do not add milk or water. Pour the eggs slowly on top of the now melted butter. Use a fork to move the egg after the bottom layer cooks. Flip parts over to cook runny areas. Repeat this until there are no more runny bits. Quickly remove the eggs from the pan so they don't over-cook. Now pour some orange Slice and enjoy your second supper. |
