Leftover Prime Rib
 
Anymone know any good recipes for leftover prime rib?

I made a huge (and delicious) prime rib for Christmas dinner using a slow roasting method.....and now have lots of medium-rare leftovers. I am hoping someone knows of something beyond sandwiches (a given) that I can make with it.

Sandwiches, salads, wraps, fajitas, use the juice in a soup, I'm salivating just thinking about it. What a nice problem to have! :D

Cube it and make absolutely fantastic Chili. Slice it super thin, wrap it around scallions, and drizzle it with sour cream mixed with horseradish and a dash of malt vinagre.

Beef Stew
Vegetable Beef Soup (perfect use if you have the bones)

Slice it thin and make some philly cheese steak sandwiches.

boil & shred it for chili or tacos.

or cut it up & make a beefy vegetable soup or stir fry.

I take the leftover prim rib and use it for soups and stews. And Meat pies. then freeze the left overs and the wife and kids have quick meals . :thumbsup:

I'm sure this response is too late, but the absolute best use for leftover prime rib is Prime rib hash.

Cube the meat and chop some taters up to approximately the same size. Boil the potato cubes for 15 minutes, drain, salt generously, throw 'em in a skillet with a 1/4 stick of butter. When they start to brown, add the prime rib cubes. add a teaspoon of crushed garlic and a pinch of red pepper flakes.
