Crockpot Turkey Breast w/ Cranberry Sauce.
1 Turkey breast about 6 lbs (make sure it will fit in your crockpot you may need to cut off the lower part of the ribcage to do this)
Brine your turkey over night in the following: 3/4 gallon warm water 2 cups White Wine 1.5 cups Orange Juice 1 cup Kosher salt 1/3 cup of chopped ginger 1 T. black peppercorns 1 cup Brown Sugar a few bay leaves 1 T. of thyme Mix to dissolve sugar and salt, put turkey in brine in fridge overnight. Place Turkey in crockpot with about 2 cups of brine and cook till the turkey is done, 3 to 4 hours on high will do it, or longer on lower heat. Now for the cranberry sauce: 1 - 12 Oz. bag of fresh cranberries 1/3 cup of chopped ginger 2 teaspoons of orange zest 1 cup sugar 1/4 cup orange juice 1.25 cup water 1/4 cup of triple sec (or if you can afford Grand Marnier) Put glaze ingredients into a saucepan and bring to a boil using high heat. Stir while cooking and bring down to a simmer, cook till berries burst and the sauce thickens. Strain mixture, cool, and drizzle over the sliced turkey before serving.
