Cajun Red Snapper
Made this last night, quite good.
Cajun Red Snapper Ingredients: (rough guesses of what I used) 1/2 t. paprika 1/8 t. cayenne pepper 1/4 t. ground black pepper 1/4 t. onion powder 1/2 t. dried thyme 1/4 t. dried basil 1/4 t. garlic powder 1/8 t. teaspoon dried oregano Mix together and hold back to season fish 2 t. butter 1 t. olive oil Place in small disk and melt in microwave. 4 Red snapper fillets, approx 4-6 oz skin on Brush the butter oil on the fish and use the dry season to cover the fish. About 1/2 t. per side of fish. Heat a cast iron skillet on high until it is hot enough for the water to dance, cut the heat to med, pour the remaining butter oil into the pan and add the fish skin side down, after approx. 5 minutes drizzel top side of fish with olive oil and flip over. After the fish has turned white all the way through (judge this by looking at the side of the fillet, flip back to skin side and allow to finish, the fillet should be slightly brown and the fish should be flaky. Enjoy. |
Ohh man that just sounds tasty.. I’ve done the Cajun/Blackened Snapper a couple of times just using the store bought (Emirl's Essence) seasoning. (which i think is pretty close to your seasoning above.
Nothing quite like taking a charter out all day in the Gulf and coming home to some good blackened fish! |
