Just made a dinner for two with a squash
 
Buy a two dollar walnut squash, half and seed it, and bake it in an inch of water for an hour. Put some butter and brown sugar in there, bake for another ten minutes, and bam, dinner for two.

Squash is filling.

what temp? how much butter? how much brown sugar? put the butter and b.s. in the pan with the water? or in the hollow of the squash? ???

Squash is real fun! Squash Risotto, soup, pastas, garnish on salads, etc..

Spaghetti Squash is one of my most favorite things on the planet...
Slice it in half, put it in a pyrex dish with about a cup of water, prick it with a fork a few times, and cover with plastic wrap - put in microwave for about 15 minutes or until squash is soft)
Scrape out spaghetti's - throw in some garlic, butter and parmesean cheese, and I'm a happy camper.

next time.

cook it. scrape out some chunks. mix the chunks with cooked italian sausage, tomatoes, and a little bit of spinach or basil then stuff the squash top with favorite cheese bake at 425 until cheese melted and enjoy.

Squash is great for thanksgiving dinners, BTW. Acorn squash is my fav. recipes abound.

And you can cook the seeds besides!

I love butternut squash, seeded, cubed, put on a cookie sheet with some olive oil, kosher salt, and brown sugar, bake on 350 for 30 minutes and then broil for another 10-15. Tasty!
