i do something similar with a rib eye
preheat oven to 500 put cast iron pan in oven for 10 min pan fry steak over high heat (with about a Tbs oil) 2 min on each side finish in oven (still at 500) for 8 min. |
I gotta try this, whenever i've tried to pan-sear or broil a steak i've been dissapointed, but i'm sure its something i've not been doing right.

Daval,
I do not know if this what you have been doing but I know for a long time my wife had truble with pan-searing. Well talking to here about it I found out that she was not preheating the pan. The pan and oil need to be realy hot for the searing to work. If this is not the problem you had peale diregard my post. |
