Mexican Pizza?
I've been having a craving for some mexican pizza, but I don't want to go to taco bell. I was wondering if anyone has tried to make their own and how you went about doing it. Really all I need to know is what should I use for a shell/bottom layer. I have a deep fryer, although if I was to deepfry a tortilla I don't think I could keep it flat, seeing how my deepfryer is rectangular and not circular. Any advice would be appreciated.

You are making a tostada. As Clark said, use a cast iron skillet. Don't use a teflon skillet for frying anything ... the oils gets too hot. Don't worry about keeping it perfectly flat, it should puff up a little bit anyway.
Plus cast iron makes everything taste better. |

I think they call them Fiestadas or something like that. Yeah I made some by deep frying small tortillas in a cast iron skillet in some peanut deep fry oil, layered with beans, meat, cheese, another fried tortilla, sour cream, guac, salsa. topped with shredded lettuce and diced tomatoes. Pretty damn good.

I made something kind of similar once, though it might've been closer to a Mexican Lasagna. I just alternated layers of flour tortillas with refried beans, cheese and hamburger between them, then more cheese, lettuce and tomatoes on top. It really was pretty good. Maybe if you used crunchy shells instead it would be more like TB's version.

I would suggest trying a real Mexican Pizza. Use a standard frozen pizza crust. Add a bit of taco sauce or salsa. Top with seasoned Gound Beef, Beans and Onions. If you like it spicy some jalapeno's. Cover with Mexican Blend Cheese. Bake and then top with Lettuce, Tomato and Black olives. Sour cream on the side. It's awsome.
