This is my "left-overs" recipe
Pork Fried Rice 1 pound cooked rice (lately I've been using Jasmine rice because I find plain white rice boring - and I'll cook it in the microwave to save cleanup) 1 tbs oil (little more little less depending how fatty the meat is) 1 cup of diced meat of your choice (chicken, shrimp, pork, beef, turkey) 2 tbs scallion, sliced thin 1 -2 cups Shredded veggies (carrots, cabbage, whatever you like, shredded small - I tend to use the packaged cole slaw mix from the produce aisle, you know the kind that you have to add mayo to) 2 to 3 tbs soy sauce 1 large egg, beaten -------------------------------------------------------------------------------- Break up rice to remove any lumps. Heat a small amount of oil in the wok. Add the meat and stir-fry for 1 minute. Add scallions and stir-fry for 1 minute. Add any raw vegetables and stir-fry until almost done. Add the rice and stir-fry until it is hot and lightly coated with oil. Add any cooked vegetables and mix in. Add soy sauce and salt, if needed. Add beaten egg and mix in. Stir-fry until egg is cooked.

almost teh same as maleficent's and clark's ..just i like sesame oil infused with fresh chunks of ginger drizzled on top of it liek 2 minutes before its done and i cook a small amount of it with the egg and add it to teh rest..mainly because i just dont liek it to be too eggy...then i add waterchessnuts and chopped canned bamboo..yummmmm

Fried rice can be as individual as the person making it - really the only thing I'd recommend us using cooked rice in it-- it makes a world of difference (I've seen recipes where you toast the rice a little in the pan and then add the water -- and it just doesn't work very well.
