I need a pizza crust recipe...
I know theres alot of recipes for pizza crust, but i want the pizza crust that is chewy...you know not bread like. Do they use a high gluten flour ? or whats the secret ?

The best one I've found is here:
http://www.foodnetwork.com/food/reci..._13823,00.html It takes 18-24 hours to finish, not including cooking time. It has to rise in the fridge overnight. That's what helps it get the chewy texture you're after. Maybe cut back on the salt just a bit from what he recommends. I also ignore his topping advice. Be sure to put the oven as high as it will go when cooking it, or it won't brown properly. |
Check out some of the gourmet cooking stores, I know Pampered Chef sells them at parties, but Williams Sonoma has them as well -
There are brick like stones you can put in your oven - right on the trays, and cook the pizza right on the stones -- makes for an awesome pizza -- I use them for bread all the time, because it makes the oven hotter, I think, and just puts a fabulous crust on the bread. |
Yea, pizza stones or whatever they are called definetly are worth the money and do the trick. For pizza crust, I get it from this pizza joint near by, best crust ever. They sell it I think in 1lb incriments, makes a fairly large pizza and only costs 1 buck. Best deal ever. I'd check around to some good pizza places around your area, that is if you want them to do the work and you to reap the benefits haha.
