FISH EN PAPILLOTE
(Per serving) 1 piece parchment paper, 12 inches square 1 salmon fillet (5 to 6 oz.) 1 carrot, cut into 2 inch long julienne strips 1/2 cup sliced mushrooms 2 tbs dry white wine 2 slices fresh lemon 1 tsp minced garlic 2 tbs minced shallots 1 sprig fresh dill or 1/4 tsp. dill weed Place salmon in center of parchment. Arrange carrot and mushrooms around salmon. Sprinkle with wine and top with dill. Seal parchment butcher-wrap style. Put packets on cookie sheet, and put in 400 degree oven for about 20 minutes. With scissors or sharp knife open packet -- it will steam a lot, be careful. This is a wonderful way to serve any fish (it's also awesome with snapper, or blue fish). Vary the vegetables and herbs to suit your moods (i also like it with asparagus) You can also substitute boneless chicken breasts - - you just may have to adjust cooking time..
