great vegetarian entry
 
i am having dinner with several die hard vegetarians and need to find a great veggie entry. any suggestions?

Since it's summer and veggies are in prime season --

what about

Pasta Primavera

1/2 c sliced olives
1 yellow zuchinni squash (small, cut in half, then in diagonals)
1 c roma tomato (chopped)
1 c broccoli flowerette (seperated into small flowers)
1 cup slices mushrooms
1 lb penne pasta
2 tbs fresh garlic
1 cup white wine
sea salt
Parmsesan Cheese)
Directions:
Saute vegetables and garlic in a small amount of oil until tender crisp. Add wine and cook down. Mix in cooked penne pasta. Add parmesan salt and enjoy.

You can substitute any kind of veggies actually --

I don't know the difference between vegetarain and vegan, but I know my health food store sells vegen pasta and the vegen paremsan cheese.

Vegans consume no animal products whatsoever. I have a bottle of vegan wine, since apparently most winemaking involves the use of isinglass [link] for clarification.

I would avoid fake meat, unless you know your friends are fans of it.

The pasta recipe Maleficent posted sounds good... there was also a good grilled portobello sandwich recipe that was posted here a little while ago. You could omit the bread and just have grilled portobello 'steaks'. Maybe that and some rosemary-garlic potatoes, or a salad. Hmm I'm getting hungry...

2 things that I do when having lots of picky eaters over.

1. Soft shell tacos.

Get flour and corn tortillas- if you want to be really crafty make them yourself (they're soooo much better.

Then put a ton of fixings out. Soy Taco meat, black beans, sauteed mushrooms, cheese, radish sprouts, cabbage, lettuce, tomatoes, sauteed chopped potatoes, olives etc....

or

2. spring rolls: spring rolls are made with rice paper that you buy dried in an asian market. You dip the large round sheets in warm water then roll them yourself.

I put out bowls with the following: mushrooms, avocado, cooked rice noodles, bean sprouts, jicama, lettuce, mint and basil leaves, etc... then put out some bowls with different asian dipping sauces.

thank you so much for your ideas. everyone here is wonderful. they all sound so good i'm going to have a hard time deciding.

these friends i'm having dinner with are really my core group of friends. we have been in a carl jung study group for about 8 years. we do study other things but mainly stick to jungian thought.

we have pot luck dinners whenever we have creative nights. they always bring such wonderful things to eat and i try to bring something different each time. i consider myself a gourmet cook but alas i am a meat based person. i do love portobellos and they do taste just like steak to me.
