Cherry Stuffed Turkey Roll
made this a while back - it's is so damned easy and cheap too!!!
1 boneless/skinless turkey breast half (1-1/2 lbs) 3 tsp olive oil 1/4 cup chopped celery 1/4 cups water chestnuts drained and dried 2 tbsp chopped onion 1 cup coarsely chopped fresh sweet cherries - i used bing 1 cup coarse dried bread crumbs 2 tsp fresh sage 1 tsp fresh rosemary pinch of salt pepper to taste paprika preheat the oven to 325 f. cut the breast from the thin edge to the thick edge - DO NOT cut through to make two - you want a butterfly place the breast between two pieces of plastic wrap and pound the crap out of it so it results in about a 1/2" rectangle saute in the oil the celery, chestnuts and onion until crisp yet tender - add the cherries, bread crumbs, herbs, salt and pepper - mix well spread the mixture over the turkey tit leaving about 1" free around the edge roll it tightly and secure with skewers or tooth picks brush it all over with a little olive oil and rub the paprika over it bake it on a rack 50 - 60 minutes - internal temp should reach 170 f. a dripping pan with a little water under it helps!!! let it stand before you slice it - maybe 10 minutes if you do it on the grill - you'll have to turn it occasionly and baste it a little to keep it moist - sprinkle on the paprika - turn it and sprinkle again just before you take it off the grill this'll serve 8 - enjoy!!! |

I did a variation of this for a banquet a few years ago, and instead of turkey, we used chicken. Also, dried cherries instead of fresh. It was definetly good, and I would make it again.
Instead of skewers, we used caul fat which definetly did the job, but the shit is gross. Regardless, the poultry with hazlenuts and cherries is definetly awesome.
