Roasted Garlic Potato Salad
I sneak this onto the menu whenever I hear someone say they "don't like garlic". They love this.
20 cloves garlic, unpeeled 1# new red or white potatos 1/4 cup vinegar about 1/2 cup mayo 1/4 cup chopped onion Preheat oven to 400. Roast unpeeled garlic for 20 minutes. Remove and cool. Cook potatos until just done, about 15 minutes. Slice into halves while hot. Drizzle vinegar over potatos and allow potatoes to absorb vinegar. Peel and mash roasted garlic. Slowly work in mayo. Start with a couple of tablespoons to ensure even consistency. Blend garlic mayo with potatoes. Don't over-stir. Toss in onions. Garnish with parsley and paprika. Chill and serve. |

Plain old roasted garlic - just spread on italian or french bread is outstanding - takes on this nutty taste.
Don't even bother breaking the garlic head into cloves -- Take a head or three of garlic - Dont peel it or anything Slice off the top of the head of garlic so that you can see all the cloves of garlic Drizzle on a litte olive oil A little bit of coarse salt and pepper to taste Wrap in tin foil and toss in the oven (or on the bbq) for about 45 minutes to an hour) Remove garlic from tin foil Squeeze out garlic into a bowl - -mash together it's heaven - also really awesome in mashed taters |

Made it last night. A little fresh basil made it even better.

Sounds yummy...I have made a similar one but roasted the spuds instead of boiling.
