Koldskål (cold dish)
Koldskål (call whatever you like because I can't translate it) is a Danish cold dish that we love to eat during a hot summer.
http://www.spismed.dk/upload/koldskaal.jpg for 4 people: 1.585 quarts (11/2 litres) of buttermilk 2 eggs Just under 1/2 sugar (100 g) of sugar 1 lemon 1 grated lemon peel 1 teaspoon of vanilla (if you want) beat sugar and eggs firmly together and add buttermilk, lemon juice and the grated lemon peel (and vanilla). Leave it in the refrigerator for one hour before serving it. We serve it with "kammerjunkere" but you can also serve it with various fruits if you want. You can always add more lemon juice if you want it more bitter or more sugar/vanilla if you want it to be sweater.. recipe for Kammerjunkere: http://www.danish-deli-food.com/images/R0062.jpg 23/4 Cups (300 g) of flour 1/2 Cup + ~1T (125 g) of butter 1/3 Cup (75 g) of sugar 1 egg 11/2 tsp. of baking powder 1/4 Cup(a bit less than) (1/2 dl.) buttermilk a bit of cardamom mix everything together. Roll the dough intro a long sausage-like shape and cut off small pieces at the size of a walnut. Rolle thiese small pieces into small buns and bake them in the oven for about 10 minutes at 425 F (220 C). Before the buns get cold you cut them in two and grill them in the oven at 375 F (190 C). hope you guys like it! ;) |

I'm a bit concerned about the eggs though..I'm not sure what the current guidelines are in the US for uncooked eggs..but caution is warranted, i think. Does it work without the eggs? Or do I need to try it and see? |
hmmm you could try pasteurized eggs or you could just leave eggs out of it :D

you could use pasteurized eggs but its not really necessary.
coddled eggs could be more convenient. just boil them like hard boiled eggs, but not as long and use them like regular eggs. raw eggs should be fine i think. but you know, dont blame me if you die of egg salmonella. |

Yes! Koldskål! (coldbowl) The milk of the Gods. You can eat or drink it anytime, anyday. I usually crumble up the kammerjunkere (chamber, er... junkies) and sprinkle them on top, in semi-large to small chunks, and then eat with an expression of intense pleasure.
