Recipe of the day - 4/11 - Crab Cake Eggs Benedict with Bearnaise
Mass updating, too much time away from the computer, and again, I apologize!
CrabCake Eggs Benedict with Sauce Bernaise Today for Easter, I went to this cafe near Lloyd Center which is a nice little area near downtown Portland, and had this excellent breakfast. This is not an exact recipe, but a close estimate, and I do reccomend you attempt this, because it's awesome. Recipe feeds 1 1 English Muffin, toasted 2 Eggs, poached Crab Cakes 4 oz crab meat (claws, etc) 1 egg yolk 1t chopped scallion salt peper Mix all ingrediends and pan fry until cakes are done and don't seperate easily. Bearnaise 1/3 cup white vinegar 1/3 cup dry white wine 4 crushed peppercorns 1 heaping tablespoon very finely chopped shallots 2 heaping tablespoons finely chopped leaves of chervil or parsley 6 sprigs fresh tarragon 1 cup clarified butter (2 sticks of butter melted on stovetop and only use the clear part.. white is milkfat) 1 Egg yolk Combine in a small heavy saucepan vinegar, wine, peppercorns, shallots, chevril or parsley, and tarragon with liquid or the extra tarragon vinegar. (Reserve the leaves from half of the stalks and put aside.) Cook over high heat until reduced to 1/3 cup or less. Strain through very fine sieve or cloth. Make Hollandaise Sauce using strained liquid instead of lemon juice or vinegar. Very finely chop and add remaining chevril or parsley and remaining tarragon. 1. English muffin on plate 2. Crab cake on muffin 3. Egg on crab cake 4. Sauce on the whole deal Awesome breakfast, served with home fries and fresh fruit. <3
