Best Potato Recipes
 
OK - I'm Irish and always looking for new potato recipes. Fried, mashed, baked, deep fried, hashed, chopped - whatever. Breakfast, lunch or dinner. Thanks!

Mmm, roasted.

3 lbs baby red potatos
2 sprigs fresh rosemary
Sea salt and pepper to taste
Olive oil

Preheat oven to 450.
Wash, scrub, and quarter potatos.
Pinch some rosemary leaves off stems and mince.
Mix rosemary with potatos and drizzle with olive oil.
Season with salt and pepper. In a cast iron pan
or bakeproof dish, layer potatos and place rosemary
sprigs on top. Roast for fifteen minutes, reduce heat
to 350 and roast for an additional fifteen minutes,
or until done. Taste, and reseason.

Salt Potatoes!!!

Boil 4 pounds of golfball-sized potatoes with 1 pound of salt.

They come out crusty...serve with a drizzle of melted butter.

Ahh, a fellow Irishman. Well my friend, I've been experimenting for years and made a million different things, but the old diced with peppers and onions and then pan fried is always a great standby(Potatoes O'Brien). A great way to make them tastier is by adding a few tablespoons of Red Wine or White Vinegar to the pan while frying. Adding Bleu cheese to a batch of mashed is great as well. Another easy one is to cut baking potatoes in half lengthwise, cut criss cross slits in them, season with pepper and Lawry's seasoned salt after applying melted butter, and then baking them face up in the oven. These are great with steaks, and fairly easy to make. Looking fwd to hearing more people's suggestions, Slainte!

Just to clarify, I meant Red wine vinegar in that last post, not red wine itself. It didn't read right when I looked at the post...

And always remember : WHEN IN DOUBT, ADD CRUMBLED BACON.

This applies to potato recipes in almost every sense :)

Cheesey Potatoes.

1 package souther home fries
1 can cream of Chicken soup
1 16 oz sour cream
Small onion chopped (I tend to use dehydrated)
Dash salt
Dash pepper ( I use more)
1/4 teaspoon garlic
1/2 stick butter/margarine
1 package cheddar cheese

Preheat oven to 400
Melt butter, then all but cheese and potatoes and mix well.
Once mixed together, add potatoes and mix thoroughly
Once mixed, add half of the cheese mix again.
Spread mixture onto a 8x12 or baking dish
Add remaining cheese
Bake at least 40 minutes, maybe 45 or until cheese is starting to brown.
Serve. Yummie dish.

Oh, grease the pan before you add ingredients, esp. the corners.

I did see the salt potatoes, they sound pretty wicked. Definitely planning on trying that soon. The good thing about potato recipes is that if they don't turn out that great, you're not out that much cash and someone will always eat them when they're drunk :)
