Use minute rice - instead of just water, mix 50-50 with your favorite salsa. You can also add some LA hot sauce if you like it hot. Melting some cheese on top is good too.
If it is soupy, just leave the lid off for a few minutes.

This is Spanish rice, but it'll do the job:
Cook a lot of rice. Mix in a couple of big cans of whole cooked tomatoes and break 'em up. Add a _lot_ of oregano in stages; keep tasting until it tastes right. Salt to taste. |

Cook brown rice in oil until it smells nutty but not burnt.
Add onion, garlic, peppers, whatever suits you and cook until onions are soft. Add 2 times the amount of rice in water, and one can of diced tomatoes (I usually use those large cans, 16 oz?). Salt, cayenne, paprika, chili powder, other spices to taste. This is just a thing that I make when I can't think of anything else, and I have extras lying around. |
