If you have to make something for a potluck dinner and only have five minutes, this is pretty solid.

Kathleen's Cool Corn Salad
Mix:
2 11 oz. cans of Niblets corn(sweet corn of any brand will do)
half a diced red pepper
half a diced green pepper
1 chopped scallion
1 big tbsp of sour cream
1 big tbsp of mayo
salt and pepper to taste

Great corn salad for summer or whenever. People love it and it takes five minutes.
