Chicken Cordon Bleu!
This is an awesome (and easy) chicken recipe!
Ingredients ----------- 4 medium boneless skinless chicken breasts, thawed 4 slices ham 4 slices swiss or parmesan cheese 1/8 teaspoon ground black pepper 1/8 teaspoon salt 1/2 cup bread crumbs Instructions ------------ 1) Preheat oven to 350 degrees F. Coat pan with non-stick cooking spray. 2) Pound chicken breasts to about 1/4 inch thickness. 3) Sprinkle each peice of chicken with salt and pepper. Place 1 cheese slice and 1 ham slice on each chicken breast. Roll up each breast and secure with toothpick. 4) Place each breast on the pan. Sprinkle each breast with bread crumbs. 5) Bake for 30 to 35 minutes. Juices should run clear. Remove from heat and place a small slice of cheese on top. Put pan back into the oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks and serve! Enjoi! I have ~2 peices of chicken a day, my body is worth it though! :)

I've made a lot of Chicken cordon bleu and I always use the same recipe..I'll post it later (when I remember). The recipe is similar to above but uses Proscuitto instead of ham and Gruyere cheese instead of swiss. It also is dipped in breadcrumbs and an egg/dijon mixture twice to get a good crust on it.

made it (modified a little) dipped the chicken in Egg prior to the bread crumbs, a little crispier that way, it was delicious

Cheers Buddie....I always wanted a Chicken C B recipe..now I can make it at home instead of buying high priced packeaged ones!!
