Red Wine Garlic Roasted Chicken
 
This is a fantastic and very easy recipe I stumbled across and had to share with you all.

I used a Burgandy but this would pair well with a Cabernet Sauvignon or even a Merlot.

Red Wine Garlic Roasted Chicken

2 lbs skinless, boneless chicken breasts
1 tbsp olive oil
1 garlic clove, crushed
1 tbsp paprika
1 cup brown sugar
1 cup red wine

Gently heat garlic in olive oil until tender. Add chicken and brown on each side for about 10 minutes.
Sprinkle paprika and brown sugar over chicken. Pour red wine over top and simmer for 15 - 20 minutes, basting often.

Mmm... sounds good. Im a huge fan of garlic.

Too bad I cant exactly cook like that in a dorm room. :(

I made this last night, it was pretty good. One word of warning, I cooked it a bit too long and the sugar carmalized and hardened a little too much on the bottom. It was still very good tho. Next time I am gonna try it with white wine, and a little cream.

I used a little less than half a cup of brown sugar, but it was fantastic. Good post.
