Recipe of the Day - September 13 (squash marinara)
Squash Marinara
Ingredients 3 med. zucchini, sliced 1 med. onion, chopped 1 green pepper, chopped 3/4 lb. mushrooms, sliced 1/2 tsp. parsley 1/2 tsp. garlic 1/2 tsp. basil 1/2 tsp. oregano 6 oz. shredded mozzarella cheese 6 oz. shredded cheddar cheese 2 15oz. jars marinara sauce Preparation Preheat oven to 375 degrees. Steam veggies with parsley, basil, oregano, & garlic for 3 minutes. Pour a little sauce in bottom of casserole dish. Alternate layers of vegetables, cheese, and sauce. End with sauce. Cover and bake 45 minutes. Bake uncovered 5-10 minutes. This would be good over spaghetti squash.
If you cook it right it has almost the same texture as pasta. It would be a low fat, low carb dinner with just about every vitamin you could ask for. |
