Recipe of the Day - August 13 (summer salad)
 

Summer Greens Salad with Fresh Corn

Ingredients
1 head frisee lettuce
1 head arugula lettuce
1 head Belgian endive
1-2 garlic cloves
1/4 cup cold-pressed olive oil
1 Tablespoon apple cider vinegar
Pinch cayenne pepper
1 teaspoon tamari
1 ear fresh raw corn

Preparation
Wash and separate the frisee and arugula lettuces, shake or spin dry, and blot with paper towels. Remove the outer leaves of the endive, quarter the heart lengthwise, and separate the leaves. Put the greens in a clean glass bowl.

Crush the garlic cloves and combine with the olive oil, vinegar, and seasonings. Add the dressing to the bowl containing the lettuces, and cover with a large plate. Shake until dressing evenly coats the greens.

Arrange greens on a serving plate. Husk the corn and cut away the kernels, sprinkling the fresh corn over the top.

Serves 5.
