Recipe of the Day - July 23 (grilled sweet corn)

Grilled Sweet Corn

Ingredients
4 ears of sweet corn, leave husks on
2 quarts water, for boiling corn
2 Tablespoons Extra Virgin Olive Oil
1 teaspoon fresh parsley, finely minced
1 teaspoon fresh basil, finely minced
1 teaspoon fresh thyme, finely minced
2 cloves garlic, finely minced
1 teaspoon Umeboshi Paste, or 1/2 tsp. Sea Salt

Preparation
Boil the corn in water for 5 to 7 minutes, remove, drain and allow to cool slightly. Remove the husks. Keeping the husks on while boiling holds the sweet favor and vitamins in the corn.

Mix the oil, garlic and herbs together. Drizzle the herbed oil over the ears of corn.

Cook the corn on a tabletop or outside grill, turning the ears often until crisp and golden.

Remove and rub a small amount of Umeboshi Paste on each ear, or sprinkle a little Sea Salt on each ear.
