Recipes Using Banana Peppers
Banana Pepper Casserole
Ingredients 10 banana peppers 8 oz. Velveeta cheese 1 c. cooked rice 1 can biscuits, 5 count 1 can Rotel (find product info here) Preparation Split banana peppers and remove seeds and veins. Cube cheese and microwave until melted. Stir cooked rice into melted cheese. Stuff each pepper with cheese/rice mixture. Roll each biscuit very thin and cut in half. Place in greased baking dish. Spoon Rotel over peppers keep liquid to a minimum. Bake at 400 degrees until biscuits are flaky. |

Stuffed Banana Peppers
Ingredients 1 sm. chopped tomato 1 sm. chopped onion 1 med. chopped bell pepper 2 c. grated Cheddar cheese 1 sm. jalapeno pepper, chopped 2 tbsp. sweet pepper relish 1/4 lb. bacon 1 doz. banana peppers, with seeds removed Preparation Wash peppers. Make slice down on side and remove seeds. Mix all ingredients except banana pepper and bacon. Stuff peppers, wrap bacon slice around. Bake at 375 degrees until bacon is cooked. |
