A Recipe : Chicken and Vegetable Pie
Chicken and Vegetable Pie
Serves 2 This Chicken and Vegetable pie is delicious and very simple to make. It is delicious served with mash potato! Ingredients: 2 large boneless, skinless chicken breasts Good handful mixed veg (carrots, peas, green beans etc, frozen is fine) 50g butter 2 tablespoons plain flour 1/2 teaspoon salt 1/4 teaspoon black pepper 200ml chicken stock 75ml milk Puff pastry for topping 1 egg Method: Cut the chicken into cubes and place in a saucepan with the mixed veg and cover with boiling water. Boil for about 15 minutes until the chicken is cooked through. Meanwhile, bring the stock to boil in a small saucepan. Sieve the flour into the stock, and add the salt, pepper, milk and butter. Stir until you get a smooth, thick gravy (you might need to add more flour/butter or milk, depending on how thick you like it. When the chicken is cooked, drain it and pour it into a pot, oven-proof dish. Pour over the gravy and mix together. Roll out the puff pastry, place over the dish and cut off the overhanging trimmings. Decorate as you wish, but remember to put a couple of holes in the centre. Whisk the egg in a jug and brush over the pastry. Place in the centre of a pre-heated oven at 220° and bake for about 25 minutes, until the pastry is golden brown. Remove from the oven and serve with mashed or roast potatoes. |
