Raw Vegan 'Cookies'
So I came up with a recipe for decent Raw Vegan Cookies. I thought I would share the recipe with everyone. The ingredients are pricey, but you can eat 5+ cookies for dinner and not feel bad about it. :)
This makes 25-30 2 inch cookies. 2.25 cups of Raw almonds 1.75-2 cups of Raw Cacao Nibs(2 cups is very rich) 1.5 cups of steel cut oats 1 cup walnuts 1 tps salt ~12 oz of Raw Honey Know going into this that it is very labor intensive. Be prepared to spend an hour on this. You will need a good blender for this, two mixing bowls, and a large spoon. Blend everything except for the honey into a coarse flower. It will be very clumpy from the oils in the nuts. These oils come in handy later on when forming the cookies, but make the blending process a royal pain in the ass. It is a good idea to only fill the blender half full. Have a separate bowl to put the partially blended nuts. You will have to move everything around a good bit before you get a good consistency. Once you have this done, add it all to a large mixing bowl with the honey. After you have it all blended(this takes a LONG time. Raw honey is very very thick) taste it. You may want to add a little more honey. I do not like mine too sweet. Grab a handful of the mix and pack it into a ball. Smash the ball firmly in your hands to form the cookie, repeat 20-30 times. |
While this recipe sounds really awesome.. isn't honey considered non-vegan? Just curious.
I might try this sometime when I have a whole day to play around in the kitchen. |
Try substituting the honey with agave nectar to make them fully vegan.

Yes, Honey is considered non-vegan in most circles. I just forget that because I eat raw honey. I only went raw vegan as a health thing(and it is temporary). I believe vegans who do not eat honey do so as an animal rights thing... I could be wrong.
Agave would probably work. I think agave and molasses would be a good substitution, but you would need to cut back on it a good bit. |
