Skirt Steak
i had skirt steak for the first time, and it was damn good! i was wondeirng, though, what part of the cow does it come from? its kinda long and not very thick, so i assumed its the abdominal muscles of the cow. anyone know?

You got it...It is the diaphram muscle between the abdomen and chest cavity...Very flavorful but must be cooked right and sliced correctly so as not to be tough or stringy.

best when marinated overnight...tossed on a hot grill and seared on both sides.

you know, I had a skirt steak at a texas restaurant about a month ago - this was their featured specialty.
And I was not impressed at all. I found the texture wierd, taste not quite right, and was just overall unimpressed with it. |
