Spicy Pickled Eggs

Normally Starkizzer is the one who does the cooking around here, and for good reason! However, tonight I decided I wanted to try something on my own. Spicy pickled eggs!

I mixed and matched from various online sources to come up with the following:

12 Large Eggs
1 Whole Garlic
1 Red Onion
1 Medium Piece of Ginger
3 Whole Jalapeno Peppers
3 Whole Habanero Peppers
1 Tbsp Black Peppercorns
1 Tbsp Coarse Black Pepper
1 Tbsp Kosher Salt
Apple Cider Vinegar
Spare Pickle Jar

The Raw Materials:

Peeled Garlic:

Grated Ginger:

Whole Peppercorns:

Chopped Ginger:

Chopped Red Onion:

Chopped Jalapeņo:

Chopped Habanero:

Prepped and Ready:

Procedure:
Sanitize the jar and lid in boiling water. Hard boil and peel the eggs. (I boiled the eggs for 20 minutes and ended up with a couple broken eggs, so only 10 made it) Take two cups of apple cider vinegar and put it on the stove to boil. Combine everything else but the eggs (reserving some onions and peppers to add fresh at the end) and let the mixture boil then simmer for 10 minutes. Cool the mixture in an ice bath. Combine the eggs, pickling mixture, and fresh onions/peppers in the jar.

The finished product:

Now, I am waiting one week to let the pickling mixture do its magic. I will post the final results once the eggs are ready. I hope they are tasty!

Oh, how I love you! It took forever for this to be completed because he had to stop and take pictures of every step.

He wouldn't let me help except to peel the egg, I am a pro at it!

I will admit, it smelled really good and he did a very nice job chopping everything up. I may make a chef out of him yet...or at least a damn good sous chef!

I can't wait to try them either! I just figured out I have $7.49 invested in these. Not too bad...I'm sure a jar of pickled eggs would cost that much and probably not be as tasty!

Looks delicious! I don't think I've ever even heard of pickled eggs... I don't even know what habanero tastes like, but the other ingredients give me some clue of the final taste.

Daniel, did you look at the picture? That is Alberston's brand and clearly not the brand I linked to in my post in the Ladies Lounge.

The stuff I use is unfiltered and unpasteurized.

After one week:

The mixture hasn't penetrated the egg much, but still very spicy and tasty!

Not much change. Perhaps one week is all these need.

The colour has not changed, but I wonder, has the flavour matured?

Not significantly. Perhaps they have become slightly spicier with time, but not enough to wait before eating.

so can you just boil more eggs and toss them in the jar for a week or do you have to do the mixture over for each batch?

I'm going to test that. I'm all out now and I bought more eggs to boil. I am guessing the next batch may not be as spicy since I ate some of the peppers, but the mixture is still quite potent!

Next time I'm going to town, I need to take a list of all those ingredients and try to find them. My sons like everything spicy, they might enjoy this.
