HUMMUS
 

I find lots of recipes for hummus made with Garbanzo beans...ho hum, but I recently had lunch in a Greek restaurant, the hummus was very light in color and I asked why: they make it with Northern white beans....anyone try this?

well for starters, if you're using northern white beans and not chick peas ( aka as garbanzo beans), then its not humous.

replacing the core ingredient in a traditional middle eastern dish and calling it humous is futile. surely the greeks have another name for it?

I make a white bean dip out of navy beans or Great Northern beans from time to time. I just call it white bean dip. It doesn't have tahini in it, either. I usually flavor it with garlic, herbs, salt, pepper, and a good glug of extra virgin olive oil.

I agree, dlish--hummus is chickpeas, tahini, garlic, lemon, and extra virgin olive oil. Some people throw other stuff in it, like roasted red peppers, but I prefer the original, and I like being able to taste the different elements of the hummus.

Now I'm hungry. Good thing we're having hummus at the reception!
