Great grilled chicken recipe w/a kick!!
I grilled out some chicken quarters last night that had to be some of the best grilled chicken I've ever had. Seriously, I thought they were phenomenal, so you should definitely try this at home.
Ingredients: 4-5 Chicken quarters (thigh and leg portions) with skin on them. 1 1/2 cups mayo (no, you do NOT taste the mayo, it's just a base for the marinade) Juice from one lime 1 tbl cumin 1/2 tbl chili powder 1/2 tbl chipolte pepper powder 1 tsp cayenne pepper powder 1 tsp garlic powder 1/2 tsp oregano 1/2 tsp salt 1/2 tsp pepper 1 tsp crushed red pepper First, salt and pepper the chicken like you would any other time. Then mix mayo, lime juice, and all seasonings listed above (including salt and pepper again). I cooked over a nice charcoal fire with a few chunks of hickory on top. Make sure the fire is nice and hot, but keep the heat indirect. A great way to do this is to have a drip pan under the center of the grill and have all the charcoal surrounding it, or on either side of it. Put the chicken (at this point only salted and peppered) over the fire and let cook for several minutes on each side. Once you think the chicken is about half done, bring out the sauce. Liberally baste the top side of the chicken with the sauce (be careful not to have too much drip off the chicken or it may cause flare ups). Let it cook for a couple minutes, then flip it and baste the other side of the chicken. I flipped the chicken several times so that each side got 2-3 bastings, each time letting it cook for a couple minutes after basting before flipping. Great sides to go with this are an avocado/tomato salad and spanish rice.

sounds very yummy. I'm going to try that on my Weber, indirect as you suggest (I do my Thanksgiving turkey on it that way and it's always highly complimented and devoured)
ps: what's wrong with mayo!!?? I happen to like mayo as long as it's Hellmann's |

Nothing is wrong with mayo, but I posted this on another forum I frequent and a bunch of people freaked out saying the mayo was a dealbreaker for them. So I thought I'd throw the caveat in when I posted it here.
