Has anyone here made their own jerky, or have any recipes?
I went deer hunting for the first time this year and got a monster buck (check Weapons Forum for pics). To complete the experience, I butchered it today with help from a friend, and have quite a bit of meat I want to turn into jerky. I've found a few recipes online, but was wondering if anyone here had any recipes, suggestions, or tips.
I don't have a dehydrator, I was planning on using either the oven or a smoker to dry it.

Most recipes are going to be somewhat similar; they will all have a base of soy sauce/Worcestershire/ maybe some honey or brown sugar.
The secret to my jerky is spicy Chinese chili garlic paste. It gives it a nice extra flavor kick. If you're going to hunt more in the future it may be worth buying a dehydrator. Not very expensive and makes really nice jerky. And one tip: Partially freeze your jerky meat (maybe 30 minutes in the freezer) before you slice it up because it makes the cutting much easier. MY fiance's grandpa uses his Traeger smoker for venison jerky. I'm not sure what his recipe is, but it's delicious. I always eat too much. I'll inquire this weekend.
