Almond "Sugar" Cookies (low carb, no flour)
I tried these tonight (I mixed-and-matched a few different sugar cookie recipes togethre), and they turned out better than any of the other low carb cookie recipes that I've tried.
------------------------------------------ Sugar cookies 1 1/4 cups almond meal / flour (ground almonds) 1 cup Splenda (or other sugar substitute that you can bake with) 1 egg 1/4 tsp nutmeg 1/4 tsp cinnamon 2 tsp baking powder 1 tsp vanilla extract 1/4 cup butter -- softened 1/8 cup Splenda crush for dusting Preheat oven to 350°F-180°C. Mix almond flour with Splenda, baking powder, nutmeg, and cinnamon, sifting until well mixed. In a separate bowl, lightly beat egg and then mix well with extracts and softened butter. Add to dry ingredients and mix really well. Form dough into 24 small balls and space evenly on two ungreased cookie sheets (most cookie sheets will hold 12 cookies - 4 rows of three - very evenly.) Press moderately to flatten to a silver-dollar pancake size. If you choose, sprinkle liberally with granulated splenda , just as you would traditional "sugar" cookies. Bake for approximately 8 minutes at 350°F-180°C. They will slide right off the cookie sheet. Cool 5 minutes before eating. - - - - - - - - - - - - - - - - - - - Per Serving (excluding unknown items): 50 Calories; 3g Fat (59.3% calories from fat); 3g Protein; 2g Carbohydrate; 0g Dietary Fiber; 13mg Cholesterol; 22mg Sodium. Exchanges: 0 Grain(Starch); 1/2 Lean Meat; 1/2 Fat. =============================== Original unmodified sugar cookie recipe taken from CARB-LITE, and fiddled with a little.

Thanks for the recipe, seretogis.
![]() I was wondering, are these sturdy cookies when cooled down? I was thinking of using them for Christmas cookies and putting frosting and other decorations on them. I know it probably defeats the low carb part, but it's better than nothing, I guess.
