crock pot: Chicken Azteca
I've got a crockpot cookbook and like making different things. some of it's so-so but everynow and then i hit a jewel. this is a good one.
2 cups frozen corn 1 can (15 oz) black beans, rinsed and drained 1 cup chunky salsa, divided 1 clove garlic, minced 1/2 teaspoon ground cumin 4 boneless skinless chicken breasts 1 package (8oz) cream cheese, cubed Hot cooked rice Shredded Cheddar cheese 1. Combine corn, beans, 1/2 cup salsa, garlic and cumin in slow cooker. Arrange chicken breasts over top; pour remaining 1/2 cup salsa over chicken. Cover. Cook on HIGH 2-3 hours or on LOW 4-6 hours or until chicken is tender. 2. Remove chicken; cut into bite-size pieces. Return chicken to slow cooker; add cream cheese. Cook on HIGH until cream cheese melts and blends into sauce. 3. Spoon chicken and sauce over rice. Top with Cheddar Cheese. Surprisingly good stuff! |

That recipe sounds very tasty. I would be tempted to substitute chicken thighs but otherwise I'm gonna try that one.

Made it this evening...quite tasty and filling over rice. Corn, black beans and salsa go good together. Doubled the serving amounts, but used the exact recipe. I might throw in some diced potatoes next time.

I got a new slow cooker for Christmas and I haven't used it yet... I might have to break it in with this.

I tried this recipe...was pretty popular! However, we did find it a bit rich...if I were to do it again, I think I would reduce the amount of cream cheese..maybe by 25%.
Spicy salsa also helped. |
