Eggplant Dream
I made this at the bar I work at (you can read about it in my blog) and it was so good, a lady gave me pot for it. its that damn good. It's also easy and vegetarian.
Peel an eggplant and cut it into strips, like french fries. Heat oil in a pan, add one or two cloves of chopped garlic, a small chile (if you like spicy) and red pepper flakes. sautee for a minute or two, add eggplant and toss to coat. you might need to add more oil, the eggplant soaks it up . When the eggplant is soft and rust colored, add a chopped tomato and sautee for another minute or two. Add cream, some milk, parmesan cheese, basil, and salt to taste. stir it all up and let it cook until the sauce thickens a bit. garnish with fresh basil or flat leaf parsley. |
I'm sure I would like the taste of that even if I wasn't stoned. I love eggplant every which way. Sorta sounds like quickie eggplant parmesan.

This makes me want to get the eggplant recipe from my dad called Iman's Delight. That is one good dish. There is another one, I don't know the name of but, it has a load of mint, basil, capers and Parmesan cheese.

For which one? Imans delight? That one is a recipe from my parents Mediterranean cook book. Story goes it was so good the Iman fainted with delight.
The other one is just eggplant cut in half, scored, and then chopped ingredients like, olive, mint, basil, capers and Parmesan cheese are put on it and drizzled with olive oil and baked. |
the one with teh mint and basil and such. sounds like a ragout or caponatta, but its not baked. but i guess it could be. sounds tasty no matter what you call it.
will you share the imamīs delight recipe? |

i think you meant imams delight? an imam is the main spiritual leader, and the one who leads others in prayer, and is a male. iman on the other hand means 'faith'. but is also a common female name. not sure which one you meant..but it sounds like a wicked recipe |

dredge in flour, shake off the excess and run thru a beaten egg for a binder, then dip in a bowl of panko... skittle in extra virgin olive oil with mashed garlic till just half way done and move to a preheated oven set at 350 F for maybe another 15 minutes... when golden brown remove to paper towels to drain and while still hot season with cracked pepper and kosher salt... serve with fresh crumbled bleu cheese dressing, ranch or 1000 island... i can eat a whole one |
