Ricotta Salata and Palak Paneer

I love Palak Paneer, the Indian spinach and cheese curry dish. I have figured a way to make it without using paneer (the Indian cheese).

RICOTTA SALATA!!!

You can find it in the gourmet cheese/deli area of most supermarkets. You can fry ricotta salata straight up, it won't melt, it just gets crispy. Now I can enjoy Indian food whenever I damn well please. Or, if I just feel like frying cheese, I can (and now, so can you).

Palak Paneer

Heat vegetable oil in a heavy skillet. Add a bunch (I don't know how much, as much cheese as you want) of cubed Ricotta Salata and fry until golden brown. Add sliced tomatoes (two or three should do, I like to use cherry tomatoes) and stir fry, breaking them up as they fry for about 5 minutes.

Add 1 tsp cumin, 1 1/2 tsp chili powder and pinch of salt and mix it together.

Add a bunch of spinach (spinach cooks down to almost nothing, so add a whole bag of it) and fry it up till wilted.

If you want it spicy, now add chopped green chilies. If not, serve and eat .
