Tasty Lentils
I like lentils, they are a great source of fiber, complex carbs, and folic acid. Here is a great, easy recipe that is so tasty, it will change your mind about them.
Rinse off a scant 1/4 cup of orange lentils (you can use any, I the like orange ones) and let dry as you do the rest of the recipe. Of course cooking is an art, so adjust all amounts to your taste. Melt 1-2 Tablespoons of butter and 1-2 Tablespoons of olive oil in a pot, sautee 1 medium chopped red onion until soft. Add 1 or 2 chopped cloves of garlic and sautee for a minute or two and add salt and pepper. Throw in lentils and sautee for about one minute. Add 1/2 Tsp turmeric, 1/2 Tsp garam masala, 1/2 Tsp ground corriander, sautee for about 30 seconds, and add 1 1/2 cups of water. Bring just to boil and then turn down heat and simmer for 20 minutes. Stir occasionally and add a bit more water if all the water is gone before lentils are soft. Season with salt and pepper and eat up. Feel free to add chopped peppers (any kind) if you'd like, or even a bit of lemon juice for a citrusy zing. |
